It was over fifteen years ago when unaware of its international wine reputation, I landed a bartending job at Rubicon restaurant. Back then my wine knowledge was rather scarce to say the least; I knew that Riesling produced white wines and Cabernet Sauvignon made tannic reds. Driven by natural curiosity and hunger for knowledge I embarked on my journey into the world of wine. Inspired, supported and tutored by then boss and now my friend Master Sommelier Larry Stone, I was given opportunities few in the business could dream about. I traveled to various wine regions. I tasted wines at some of the best wineries worldwide and with some of the best wine professionals, and I studied incessantly.
Wine has always played a significant role in our evolution and to know it well one has to be familiar with many aspects of human knowledge. This wine list is designed to represent the diversity and the global expansion of the world of wine as well as to complement the meticulously composed and innovative food of our Executive Chef, Matthew Dolan. The selected wines are a balanced compilation of classic and esoteric wine regions and styles. Terroir specificity along with the purity of flavors, value, and food friendliness motivate my selections. The wines are categorized according to grape variety and they intend to reflect their characteristic aromatic profile of fruit, expression of geographic origins, and specific wine making techniques. With this list I am pleased to share my passion as well as knowledge of the perpetually changing wine world.
Our corkage fee is $30 per 750ml bottle. We have a limit of 1 bottle for 2 people and total limit of 3 bottles per table unless otherwise approved by our wine director. We gladly waive corkage with a purchase of a bottle of wine from our list.
